Baigan Bharta

Baigan Bharta is a popular North Indian dish made from roasted and mashed eggplant (baigan) cooked with tomatoes, onions, and a blend of spices. The dish starts with the eggplant being roasted over an open flame or in an oven until the skin is charred and the flesh becomes soft and smoky. The roasted eggplant is then peeled and mashed, and cooked with sautéed onions, garlic, ginger, tomatoes, and spices like cumin, turmeric, and garam masala. This process infuses the dish with deep, smoky flavors, making it incredibly aromatic and rich. Baigan Bharta is typically garnished with fresh coriander leaves and served hot with roti, naan, or paratha, making it a comforting and flavorful meal.
