Rotla, made from bajra (pearl millet), is a traditional Indian flatbread commonly enjoyed in the western states of Gujarat and Rajasthan. This hearty and nutritious bread is made by kneading bajra flour with water to form a dough, which is then shaped into thick, round discs and cooked on a hot tawa (griddle). Rotla is known for its slightly coarse texture and earthy flavor, making it a perfect accompaniment to rustic dishes like baingan bharta (smoky mashed eggplant), garlic chutney, or even a simple dollop of ghee. Rich in fiber and gluten-free, Rotla is often enjoyed during the colder months for its warming qualities and is typically served hot, fresh off the griddle.
