Khandvi is a beloved delicacy from the western Indian state of Gujarat. It's a savory snack made from a smooth, spiced batter of gram flour (besan) and yogurt, cooked until thickened and then spread out in thin layers. Once set, the layers are carefully rolled up into bite-sized pieces. These delicate rolls are then garnished with a tempering of mustard seeds, curry leaves, and sometimes grated coconut and coriander.
